Weekly Meal Prep: Learning to Make Meals in Advance
When my mom was here last weekend, she cooked up a storm in our kitchen and stocked us up on some of my favorite meals. Josh and I tend to cook 6 nights a week and either go out for the 7th or order in, but all in all, we're really good about cooking at home.
I typically get home from work around 6:30, though, and sometimes I want a home-cooked meal without actually cooking much. On these nights instead of reaching for the food delivery app, I want something I know is quality but won't take me more than a few minutes to heat up.
Here are some of the recipes my mom froze for us and we've been keeping for nights like these:
Josh is a big meatball lover, so I asked my mom to make these Meatball Shop Classic Beef Meatballs. They're actually super easy to make, and freeze really well. We put them in about an inch of sauce to freeze them, and put 3 meatballs in each container.
To go alongside the meatballs (or just on top of pasta), we make this incredibly simple and DELICIOUS tomato sauce. I froze it in batches so we have enough to make with the meatballs. Yum!
3. Beef Bourguignon.
My mom's recipe is a little different than this one, but that's the closest recipe I've found to hers online! Beef Bourguignon is my version of comfort food, and I like it served on top of wide egg noodles. We freeze it and then all we have to do is heat it up with some fresh egg noodles — voilá!
4. Orzo Pasta Salad.
This is a new one for us, but this Orzo Pasta Salad recipe is already a huge hit in our house. We made one batch and then kept it in the fridge to have for weekend lunches and as a side dish during the week with some grilled chicken. The best part is that it's best cold, so no heating up necessary!
