Kathryn here, Emily’s Mom, with some thoughts on post-Thanksgiving menu ideas.  

One of my favorite recipes is from Bon Appetit Magazine, circa 1998. In the house that Emily grew up in, I actually saved all of my favorite cooking magazines for recipes just like this. They were all placed in magazine holders above my kitchen shelves so that when I decided that "The Great Thanksgiving Turkey Enchilada’s" were a perfect recipe for Friday post-Thanksgiving, I could access that exact magazine. How things have changed!

This recipe for turkey enchiladas is fantastic because it can be assembled early in the day and then popped into the oven, accommodating whatever your holiday plans are.

Butter Lettuce Salad with Spicy Dressing

I can’t tell you how many times I have made this salad- it’s great because it too can be made ahead and tossed and served. It’s still in rotation to this day in my kitchen - and it goes great with turkey leftovers.

Salad Ingredients

  • Butter Lettuce leaves, rinsed, dried and torn gently
  • Mandarin Oranges (if using canned, drain well - sometimes I use fresh, too)
  • Diced Green Onions
  • Sliced Almonds

Dressing Ingredients

  • 1/2 cup Corn Oil (not Olive Oil)
  • 2 Tablespoons Sugar
  • 2 Tablespoons Rice Wine Vinegar
  • Tabasco (to taste)


  • Shake in container and dress salad just prior to serving. Serve with turkey leftovers!
